Our Beef - Grass fed, antibiotic free, hormone free, chemical free beef from Pikiroa Organic Farm and processed in our shop. Aged for 21 days minimum.
The shin (or shanks) are the legs of the animal and contains a marrow bone through the middle of it. A tough cut that requires it to be cooked long and slowly. This is the cut used for the famous Italian dish, Osso Bucco.
